"Anything Pasta" - Gluten-Free Recipe

I call this recipe "Anything Pasta" because you can put in anything you want!  It's great for those days when you are running out of food but have a bunch of random stuff hanging around in your pantry.  Here's how it goes:



"Anything Pasta" Recipe
*1 Package Brown Rice Rotini Pasta
*Any vegetables you have on hand (we used fresh bell peppers, mushrooms, zucchini, and asparagus.  Some other ideas are frozen mixed veggies, frozen corn, peas, etc.)
*Chicken - canned or fresh, OR Tuna - canned, OR Ground Turkey, OR you get the picture (we used canned chicken)
*Olive oil
*Salt and Pepper
*Garlic Powder or other seasonings to taste



Cook the pasta according to the directions on the package.
Chop up the veggies into small pieces.
Sauté the veggies with a little bit of olive oil, salt and pepper, and garlic powder.
When the pasta is done, drain it and rinse it with water.  I like to rinse my rice pasta because otherwise it has a somewhat sticky residue.
Drain the chicken or tuna if using canned.
Mix the chicken and veggies with the pasta and drizzle with olive oil.  Sprinkle with salt and pepper.  Mix well.  Eat!

Makes about 6 hearty servings.
Tastes great the next day as "leftovers."



P.S.  You can use whatever kind of pasta you want, doesn't have to be gluten-free.  :)
